Koeksisters are one of South Africa’s most recognisable traditional sweets. They are crisp on the outside, soft on the inside, and soaked in cold syrup that gives them their signature glossy finish. Although simple in concept, koeksisters require care, timing, and patience to achieve the perfect texture and flavour. For many, they represent celebration, comfort, and cherished memories of home.
Traditionally, koeksisters are braided strips of dough that are deep-fried until golden brown. Once removed from the oil, they are immediately dipped into icy syrup. This contrast in temperature allows the syrup to be absorbed quickly while keeping the outside crisp. As a result, each bite delivers a satisfying crunch followed by sweet, sticky softness. The flavour is rich yet balanced, never overwhelming when prepared correctly.
Over time, koeksisters have become closely associated with special occasions. They are often served at church events, family gatherings, and festive celebrations. While the classic syrup flavour remains popular, variations have emerged. Some versions include ginger, citrus, or spices to add depth, while others experiment with lighter syrups or baked methods.
At The Healthy Springbok, this beloved classic is honoured while being prepared mindfully. Smaller portions, controlled sweetness, and careful frying techniques help maintain tradition without excess. The focus remains on flavour, texture, and enjoyment rather than overindulgence.
From the rhythmic process of braiding dough to the final syrupy shine, Koeksisters continue to hold a special place in South African kitchens. They are more than a sweet treat. They are a symbol of heritage, shared moments, and time-honoured tradition. Pair with our Hertzoggies recipe to complete your sweet plate for your afternoon teas and entertainment.
